Here is a very special traditional recipe for wild greens pie, called Kaltsounia from the village of Kremasti located in the Parnonas mountain range in the Lakonia prefecture. Sofia has kindly accepted to reveal her secret recipe for the first time. Sofia is the owner of Kremasti Restaurant located in the village. The wild greens are picked from ancient times from the surrounding mountains during the winter and left to dry away from direct sunlight. They are then served in their homes and in the village Restaurant all year round. Sofia and her family provide all the ingredients used from seed to final serving.

Interviewed by Dr. Matina Chronopoulou N.D., PhD whos family roots are from this village and who hosted Athan Gadanidis and Marilyn Harding by who filmed and produced and translated the video. We are very greateful for the special interest they showed in sharing this knowledge with everyone around the world.
